
Ingredients
- 1 pound of ground turkey
- 1 can of black beans
- 1 chopped zucchini
- 2 chopped carrots
- 1 chopped shallot
- 3 minced cloves of garlic
- 1 chopped orange bell pepper
- 1 tbsp of olive oil
- 1 tsp of salt
- 1 tsp of chilli powder
- 1 tsp of dried oregano
- 1 tbsp of apple cider vinegar
- 1 tbsp of honey
- 1/2 cup of tomato sauce
- 1/2 head of romaine lettuce
- A handful of parsley
Cashew avocado sauce
- 1 cup of cashews
- 1 avocado
- 2 tbsp of olive oil
- 2 tbsp of lime juice
- 1 tsp of salt
- 2 cloves of garlic
- 1 cup of cilantro
Directions
- In a large pot, on medium heat combine the turkey, beans, zucchini, carrots, shallots, garlic, pepper, olive oil and the spices. Cook for 20 minutes and stir occasionally.
- Meanwhile, add all the cashew avocado sauce ingredients into a blender. Blend until smooth. (you can always add more olive oil if you require it to be more liquidy)
- Once the meat is cooked, along with the vegetables, add in the apple cider vinegar, honey and tomato sauce. Stir for 3 minutes.
- Once done, place the meat in a large serving bowl. Add the lettuce around the meat.
- Using an ice cream scooper, scoop the cashew avocado sauce and add it to your dish.
- You can either eat this meal with tortillas or have it as a salad.
