MORNING GLORY MUFFINS

Ingredients

  • 1 1/2 cups of oat flour
  • 1 tsp of baking powder
  • 1/3 cup of coconut sugar 
  • 1/2 tsp of cinnamon 
  • 1/4 tsp of nutmeg
  • 1/2 cup of pumpkin seeds
  • 1 cup of raisins 
  • 1/3 cup of chopped dates
  • 1/2 tsp of salt
  • 1/3 cup of shredded apple
  • 2 cups of shredded carrots 
  • 1 tsp of apple cider vinegar
  • 1/3 cup of molasses
  • 1/3 cup of coconut oil
  • 2 chia seed eggs

Directions

  1. Preheat the oven to 350 degrees.
  2. In a large bowl, add all the dry ingredients with the wet ingredients to follow. Combine and stir well. 
  3. Using an ice cream scooper, place one scoop of the batter to each of the muffin cups. 
  4. Bake for 20 minutes or until golden brown.

Wake up to a fluffy, flavourful and delicious breakfast. This Morning Glory Muffin is super tasty and healthy. Filled with oats, pumpkin seeds, raisins, dates, apple and carrots. A breakfast you won’t want to miss and goes perfect with your morning coffee or tea!
