
Ingredients
- 1 1/2 cups of oat flour
- 1 tsp of baking powder
- 1/3 cup of coconut sugar
- 1/2 tsp of cinnamon
- 1/4 tsp of nutmeg
- 1/2 cup of pumpkin seeds
- 1 cup of raisins
- 1/3 cup of chopped dates
- 1/2 tsp of salt
- 1/3 cup of shredded apple
- 2 cups of shredded carrots
- 1 tsp of apple cider vinegar
- 1/3 cup of molasses
- 1/3 cup of coconut oil
- 2 chia seed eggs
Directions
- Preheat the oven to 350 degrees.
- In a large bowl, add all the dry ingredients with the wet ingredients to follow. Combine and stir well.
- Using an ice cream scooper, place one scoop of the batter to each of the muffin cups.
- Bake for 20 minutes or until golden brown.
