Next, you’ll add in the drained and rinsed kidney beans, diced tomatoes, and sundried tomatoes (along with some of the oil from the jar, if desired) and stir everything together.
Then, you’ll add water and the seasoning mixture, which includes bay leaves, dried basil, dried oregano, thyme, salt, and pepper. Bring everything to a boil, then reduce the heat and let it simmer for 30-40 minutes to allow the flavors to meld together.

- 1 lb. lean ground beef
- 3 tbsp of olive oil
- 1 tbsp of apple cider vinegar
- 1 cup of chopped yellow onion
- 1/2 cup of chopped celery
- 1/2 cup of chopped cabbage
- 1 cup of chopped carrots
- 3 cloves of garlic (minced)
- 1 can of kidney beans (drained and rinsed)
- 1 can of diced tomatoes
- 4 large sundried tomatoes (add some of the sun dried tomato oil if you want)
- 6 cups of water
Seasoning:
- 3 bay leaves
- 1 tsp of dried basil
- 1 tsp of dried oregano
- 1 tsp of thyme
- 1 1/2 tsp of salt and pepper
Topping:
- 1 cup of chopped avocado
- 1/2 cup of parsley
- A handful of tortilla chips
Here are some possible substitutes for the beef in this recipe:
- Ground turkey, chicken, or pork can be used instead of beef.
- Diced tofu or tempeh can be used for a vegetarian option.
- You can also omit the meat altogether and add extra vegetables or beans for protein.
For the olive oil, you can substitute it with any other vegetable oil such as avocado oil, canola oil, or sunflower oil.
For the apple cider vinegar, you can use other types of vinegar such as red wine vinegar or white wine vinegar.

Ingredients
- 1 ib lean ground beef

Instructions
- In a large soup pot on medium heat, saute the beef, onion and garlic for 7 minutes. Add olive oil, apple cider vinegar, celery, cabbage, carrots and saute for an additional 7 minutes. Before adding the other ingredients, make sure your beef is fully cooked.
- Add all the remaining ingredients, including the seasoning. Keep the soup cooking at low heat for 3 hours. (This is the secret to getting all the flavour!)
- Once done, enjoy adding your favourite toppings.
