Ingredients
- 2 cups gluten-free all-purpose flour blend
- 1/2 cup almond flour
- 2 tablespoons coconut sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup coconut oil, melted
- 1 cup unsweetened almond milk (or any dairy-free milk of your choice)
- 1 teaspoon vanilla extract
FILLING:
- 1 cup mixed berries (such as blueberries, raspberries, or strawberries)
- 1/2 cup of dried dates
- 1 tsp of cinnamon
- 1 tbsp of lemon juice

Here are some substitute ingredients you can use for the recipe:
- Instead of gluten-free all-purpose flour blend: You can try using a combination of rice flour, tapioca flour/starch, and potato starch. Make sure to maintain a similar total quantity as mentioned in the recipe.
- Instead of almond flour: If you’re looking for a nut-free option, you can substitute with sunflower seed flour or oat flour. Both will provide a slightly different flavor and texture but should work well in this recipe.
- Instead of coconut sugar: You can replace it with an equal amount of brown sugar, maple syrup, or a granulated sugar of your choice.
- Instead of coconut oil: Use any other neutral-flavored oil like vegetable oil or grapeseed oil. If you prefer a buttery flavor, you can try using dairy-free margarine or vegan butter.
- Instead of unsweetened almond milk: Opt for another dairy-free milk alternative such as soy milk, rice milk, oat milk, or cashew milk. Choose the one that suits your taste preferences.
- Instead of mixed berries: Feel free to use any other berries you enjoy or have on hand. Blueberries, raspberries, strawberries, or even a combination of all three will work wonderfully.
