Dough
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the gluten-free all-purpose flour blend, almond flour, coconut sugar, baking powder, baking soda, and salt until well combined.
- Add the melted coconut oil, almond milk, and vanilla extract to the dry ingredients. Stir until the dough comes together and forms a sticky ball.
- Place the dough on a well-floured surface (you can use gluten-free flour) and knead it gently for a minute until it becomes less sticky.
- Roll out the dough into a rectangle shape, approximately 1/4 inch thick.
Filling
- Using a food processor, place all the filling ingredients inside.
- Process until smooth.
- Add the mixed berry filling evenly over the dough, leaving a small border around the edges.
- Starting from one of the longer sides, tightly roll the dough into a log, making sure the berries are evenly distributed.
- Using a sharp knife, cut the log into 1-inch-3-inches thick slices.
- Place the berry slices on the prepared baking sheet, leaving a little space between each one.
- Bake in the preheated oven for 18-20 minutes or until the rolls are golden brown.Once the rolls are baked, remove them from the oven and let them cool slightly on the baking sheet.
- If desired, drizzle the berry rolls with honey for added sweetness.
