Ingredients
  

Dough
  • 2 cups gluten-free all-purpose flour blend
  • ½ cup almond flour
  • 2 tbsp coconut sugar
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ cup coconut oil, melted
  • 1 cup unsweetened almond milk (or any dairy-free milk of your choice)
  • 1 tsp vanilla extract
Filling
  • 1 cup mixed berries (such as blueberries, raspberries, or strawberries)
  • ½ cup dried dates
  • 1 tsp cinnamon
  • 2 tbsp lemon juice

Method
 

Dough
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the gluten-free all-purpose flour blend, almond flour, coconut sugar, baking powder, baking soda, and salt until well combined.
  3. Add the melted coconut oil, almond milk, and vanilla extract to the dry ingredients. Stir until the dough comes together and forms a sticky ball.
  4. Place the dough on a well-floured surface (you can use gluten-free flour) and knead it gently for a minute until it becomes less sticky.
  5. Roll out the dough into a rectangle shape, approximately 1/4 inch thick.
Filling
  1. Using a food processor, place all the filling ingredients inside.
  2. Process until smooth.
  3. Add the mixed berry filling evenly over the dough, leaving a small border around the edges.
  4. Starting from one of the longer sides, tightly roll the dough into a log, making sure the berries are evenly distributed.
  5. Using a sharp knife, cut the log into 1-inch-3-inches thick slices.
  6. Place the berry slices on the prepared baking sheet, leaving a little space between each one.
  7. Bake in the preheated oven for 18-20 minutes or until the rolls are golden brown.
    Once the rolls are baked, remove them from the oven and let them cool slightly on the baking sheet.
  8. If desired, drizzle the berry rolls with honey for added sweetness.
