Method
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a high-speed blender or food processor, combine broccoli, green peas, chickpeas, and olive oil. Pulse or blend until a thick, textured mixture forms—don’t over-blend; you want some small chunks for texture.
- Transfer mixture to a large mixing bowl. Add all spices: salt, pepper, paprika, oregano, garlic powder, onion powder, cilantro, and chives. In a separate bowl combine breadcrumbs and nutritional yeast for the crunch.
- Scoop and shape the mixture into small balls (about 2 tbsp each). Roll lightly in extra breadcrumbs if desired for added crunch.
- Place each ball on the prepared baking sheet, then gently flatten with your palm to form a patty shape.
- Bake for 25–30 minutes, flipping halfway through, until golden brown and slightly crisp on the edges.
