After numerous trials, I’ve perfected our Protein-Packed Gluten-Free & Dairy-Free Molasses Grain Loaf. Combining Teff, Sorghum, Chickpea, and Sweet rice flours, this recipe strikes the ideal balance of healthiness and heartiness. With a blend of warm spices and rich Fancy molasses, each slice is both comforting and satisfying. Enjoy it fresh from the oven or toasted for a nutritious breakfast or snack. To store the Protein-Packed Gluten-Free & Dairy-Free Molasses Grain Loaf, allow it to cool completely to room temperature after baking. Once cooled, wrap the loaf tightly in plastic wrap or aluminum foil to preserve its moisture. Alternatively, place the loaf in an airtight container or resealable plastic bag.
Store the wrapped or containerized loaf at room temperature for up to 3 days. If you’d like to prolong its freshness, you can refrigerate the loaf for up to a week. For longer-term storage, you can freeze the loaf for up to 3 months.
When ready to enjoy, simply thaw the frozen loaf in the refrigerator overnight or at room temperature for a few hours. Optionally, you can reheat individual slices in a toaster or toaster oven for a warm and comforting treat.

Molasses Grain Loaf

Method
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper
- In a small bowl, mix together the oat milk and lemon juice. Let it sit for 5-10 minutes to curdle and create a dairy-free buttermilk substitute.
- In a large mixing bowl, sift together the Teff flour, Sorghum flour, Chickpea flour, rice flour, chia seeds, psyllium husk, xanthan gum, baking powder, salt, baking soda, and cream of tartar. Mix well to combine.
- In another bowl, whisk together the eggs and molasses until well combined.
- Pour the egg and molasses mixture into the dry ingredients and mix until just combined.
- Slowly add the oat milk mixture to the batter, stirring continuously until a smooth batter forms.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the loaf from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely
- Once cooled, slice and serve your delicious gluten-free and dairy-free Molasses Grain Loaf.
