Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper
In a small bowl, mix together the oat milk and lemon juice. Let it sit for 5-10 minutes to curdle and create a dairy-free buttermilk substitute.
In a large mixing bowl, sift together the Teff flour, Sorghum flour, Chickpea flour, rice flour, chia seeds, psyllium husk, xanthan gum, baking powder, salt, baking soda, and cream of tartar. Mix well to combine.
In another bowl, whisk together the eggs and molasses until well combined.
Pour the egg and molasses mixture into the dry ingredients and mix until just combined.
Slowly add the oat milk mixture to the batter, stirring continuously until a smooth batter forms.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Remove the loaf from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely
