  • 2 cups raw almonds
  • 1-2 tbsp neutral-flavoured oil (such as almond, coconut oil)
  • ½ tsp salt (optional, adjust to taste)
  • 1-2 tbsp sweetener (optional, like honey or maple syrup)

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Spread the raw almonds on a baking sheet in a single layer.Roast the almonds in the preheated oven for 10-12 minutes, stirring them halfway through to ensure even roasting. Keep an eye on them to prevent burning.
  3. Allow the roasted almonds to cool for a few minutes before handling.
  4. Place the roasted almonds in a food processor. Start processing on low speed and gradually increase to high. Scrape down the sides as needed.
  5. This process may take about 10-15 minutes. Be patient; the almonds will go through stages of crumbs, clumps, and eventually, a smooth buttery consistency.
  6. Add 1-2 tablespoons of neutral-flavored oil to help the almond butter reach a creamy consistency. Adjust the amount based on your desired thickness.
  7. If desired, add salt to taste. Blend again to incorporate.For sweetness, add 1-2 tablespoons of honey or maple syrup, adjusting to your preference. Blend until well combined.
