Ingredients
  

  • 1 cup green lentils, rinsed
  • 2 carrots, diced
  • 1 large onion, finely chopped
  • 2 leeks, sliced (white and light green parts only)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 6 cups water
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Rinse the green lentils under cold water and set them aside
  2. Heat olive oil in a large soup pot over medium heat. Add chopped onions, sliced leeks, and diced carrots. Sauté until the vegetables are softened, about 5 minutes. Add minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Stir in the rinsed lentils, dried thyme, dried rosemary, and bay leaf. Mix well to coat the lentils and vegetables with the aromatic herbs.
  4. Add 6 cups of water to the pot. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 25-30 minutes or until the lentils are tender.
  5. Season the soup with salt and pepper to taste. Adjust the seasoning as needed. Allow the flavors to meld by letting the soup simmer for an additional 5-10 minutes.
  6. Discard the bay leaf. Ladle the hot soup into bowls. Garnish with fresh parsley for a burst of color and added freshness.
