DOUBLE CHOCOLATE BROWNIES

Ingredients
  

  • ½ cup coconut oil
  • cup dairy-free chocolate chips
  • 1 cup honey (or other sweetener of choice)
  • 1 tsp vanilla extract
  • ½ cup almond flour
  • 1 tbsp coconut flour
  • 1 tbsp arrowroot flour
  • 1 tsp salt
  • ¼ tsp baking powder
  • 2 eggs
  • 2 flaxseed eggs (To make flaxseed eggs, mix 2 tbsp ground flaxseed with 6 tbsp water, let sit for 5 minutes until thickened)
  • optional: white chocolate heart shapes

Method
 

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8 inch baking pan with parchment paper.
  2. In a microwave-safe bowl, melt the coconut oil and dairy-free chocolate chips together. Stir until smooth and well combined. You can also do this step using a double boiler on the stove.
  3. In a large mixing bowl, whisk together the melted coconut oil and chocolate mixture with the honey and vanilla extract until well combined.
  4. In a separate bowl, sift together the almond flour, coconut flour, arrowroot flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In another small bowl, prepare the flaxseed eggs by mixing the ground flaxseed with water. Let it sit for a few minutes until it thickens.
  7. Once the flaxseed eggs have thickened, add them to the brownie batter along with the regular eggs. Mix until everything is well combined and the batter is smooth.
    Pour the batter into the prepared baking pan and spread it out evenly. (optional: add in your heart shape chocolates)
  8. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).
  9. Remove from the oven and let the brownies cool completely in the pan before slicing and serving. Enjoy your delicious gluten-free and dairy-free double chocolate brownies!
