Ingredients
  

Turkey Burgers
1 lb (450 g) ground turkey
1 tsp garlic powder
1 tsp onion powder
½ tsp turmeric
½ tsp sea salt
¼ tsp black pepper
Beet Hummus
1 cup cooked beets
1 cup chickpeas, drained and rinsed
2 tbsp tahini
1 tbsp lemon juice
1 small garlic clove
1 tbsp olive oil
¼ tsp sea salt
Sweet Potato “Buns”
2 large sweet potatoes, sliced into thick rounds
1 tbsp olive oil
½ tsp sea salt
¼ tsp black pepper
Burger Toppings
1 avocado, sliced
1 tomato, sliced
4 large lettuce leaves
Slow-Roasted Yellow Potatoes
3 cups yellow potatoes, cut into wedges
1½ tbsp olive oil
½ tsp paprika
½ tsp turmeric
½ tsp sea salt
¼ tsp black pepper

Method
 

Roast the Sweet Potato Buns
  1. Preheat oven to 400°F (200°C).Arrange sweet potato rounds on a parchment-lined baking sheet. Drizzle with olive oil and season with salt and pepper.
    Roast for 25–30 minutes, flipping halfway through, until tender and lightly caramelized. These will act as the burger buns.
Slow-Roast the Potatoes
  1. Reduce oven temperature to 375°F (190°C).
    Toss yellow potato wedges with olive oil, paprika, turmeric, salt, and pepper. Spread evenly on a baking sheet.
    Roast for 30–35 minutes, turning once, until soft inside and crispy on the outside.
Prepare the Beet Hummus
  1. In a food processor, blend:
    cooked beets
    chickpeas
    tahini
    lemon juice
    garlic
    olive oil
    salt
    Blend until smooth and creamy. Set aside.
Make the Turkey Patties
  1. In a bowl, combine:
    ground turkey
    garlic powder
    onion powder
    turmeric
    salt
    pepper
    Mix gently and form 4 patties.
    Cook in a skillet over medium heat with a drizzle of olive oil for 5–6 minutes per side, until fully cooked through.
Assemble the Burgers
  1. Place one roasted sweet potato round on a plate. Add:
    turkey burger
    a generous spoonful of beet hummus
    sliced avocado
    tomato
    lettuce
    Top with another sweet potato round.
