Ingredients
  

  • cups cups millet flour
  • 1 tsp cinnamon
  • 1 tbsp ginger powder
  • 1 tsp salt
  • 1 tsp baking powder
  • ½ can pumpkin puree
  • ¼ cup oat milk
  • 1 tsp vanilla extract
  • ¼ cup molasses
  • 2 eggs
  • cup honey

Method
 

  1. Preheat your oven to 350°F and grease a loaf pan with cooking spray.
  2. In a mixing bowl, whisk together the millet flour, cinnamon, ginger powder, salt, and baking powder.
  3. In a separate mixing bowl, beat together the pumpkin puree, oat milk, vanilla extract, molasses, eggs, and honey.
  4. Gradually stir the dry ingredients into the wet ingredients until well combined.
  5. Pour the batter into the prepared loaf pan and smooth the surface with a spatula.
  6. Bake the loaf for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the loaf cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.
