Servings: 2
Course: Appetizer, Breakfast, Snack
Cuisine: American

Ingredients

  • ½ cup frozen mixed berries
  • 1 banana, sliced
  • ½ cup almond milk (or any milk of your choice)
  • 2 tbsp chia seeds
  • 1 tbsp honey (optional)
  • Toppings: sliced fresh strawberries, blueberries, granola, and/or shredded coconut

Method

  1. In a blender, combine the frozen mixed berries, sliced banana, almond milk, and honey (if using). Blend until smooth.
  2. In a separate bowl, stir together the chia seeds and 1/2 cup of water. Let the mixture sit for 5-10 minutes, stirring occasionally, until the chia seeds have absorbed the water and the mixture has thickened to a gel-like consistency.
  3. Pour the berry smoothie into a jar, leaving some space at the top.
  4. Spoon the chia seed mixture on top of the smoothie.
  5. Add your favorite toppings, such as sliced fresh strawberries, blueberries, granola, and/or shredded coconut.
  6. Seal the jar and refrigerate overnight.
  7. In the morning, give the jar a good shake to mix everything together.
