APPLE COOKIE DOUGH PROTEIN SMOOTHIE

I kickstart my mornings with a punch of protein, and this Gluten-Free Apple Cookie Dough Protein Smoothie has become my go-to. Packed with vanilla protein powder, almond flour, and a blend of other wholesome ingredients, it's a powerhouse of nutrition.

Ingredients
  

Cookie Dough Bites
  • ½ cup almond flour
  • 2 tbsp coconut sugar
  • 2 tbsp cashew butter
  • 1 tbsp maple syrup
  • ¼ tsp vanilla extract
  • 2 tbsp mini dairy-free chocolate chips
Smoothie:
  • 1 scoop vanilla protein powder (gluten-free)
  • 2 tbsp almond flour
  • 1 tbsp coconut sugar
  • 1 tbsp cashew butter
  • 2 tbsp rolled oats (gluten-free)
  • ½ cup frozen apple chunks
  • ¼ cup coconut yogurt
  • 1 cup unsweetened almond milk
  • 1 tbsp maple syrup

Method
 

Instructions for Cookie Dough Bites:
  1. In a bowl, mix almond flour and coconut sugar.
  2. Add cashew butter, maple syrup, and vanilla extract to the dry ingredients. Mix until well combined.
  3. Gently fold in the mini dairy-free chocolate chips into the cookie dough mixture.
  4. Using your hands, shape the mixture into small cookie dough bites and place them on a parchment-lined tray.
  5. Place the tray in the refrigerator for at least 30 minutes to allow the cookie dough bites to firm up.
SMOOTHIE:
  1. Peel and chop the apples into small chunks if not already frozen.Measure out almond flour, coconut sugar, cashew butter, rolled oats, and other ingredients.
  2. In a blender, add the vanilla protein powder, almond flour, coconut sugar, cashew butter, and rolled oats.
  3. Pour in the almond milk, coconut yogurt, and maple syrup.
  4. Toss in the frozen apple chunks.
  5. Blend all the ingredients until you achieve a smooth and creamy consistency. If the smoothie is too thick, you can add more almond milk.
  6. Taste the smoothie and adjust sweetness by adding more maple syrup if desired.
  7. If you prefer a colder smoothie, you can add a handful of ice cubes and blend until well incorporated.
  8. Once the smoothie is blended, drop a few of the chilled cookie dough bites into the smoothie.
  9. Pour the smoothie into a glass, and top it with additional cookie dough bites for garnish.
