Instructions for Cookie Dough Bites:
- In a bowl, mix almond flour and coconut sugar.
- Add cashew butter, maple syrup, and vanilla extract to the dry ingredients. Mix until well combined.
- Gently fold in the mini dairy-free chocolate chips into the cookie dough mixture.
- Using your hands, shape the mixture into small cookie dough bites and place them on a parchment-lined tray.
- Place the tray in the refrigerator for at least 30 minutes to allow the cookie dough bites to firm up.
SMOOTHIE:
- Peel and chop the apples into small chunks if not already frozen.Measure out almond flour, coconut sugar, cashew butter, rolled oats, and other ingredients.
- In a blender, add the vanilla protein powder, almond flour, coconut sugar, cashew butter, and rolled oats.
- Pour in the almond milk, coconut yogurt, and maple syrup.
- Toss in the frozen apple chunks.
- Blend all the ingredients until you achieve a smooth and creamy consistency. If the smoothie is too thick, you can add more almond milk.
- Taste the smoothie and adjust sweetness by adding more maple syrup if desired.
- If you prefer a colder smoothie, you can add a handful of ice cubes and blend until well incorporated.
- Once the smoothie is blended, drop a few of the chilled cookie dough bites into the smoothie.
- Pour the smoothie into a glass, and top it with additional cookie dough bites for garnish.
