ALMOND BLONDIES

Ingredients
  

  • 1 can chickpeas (drained and rinsed)
  • 1/4 cup almond butter
  • 1/3 cup peanut butter
  • tbsp maple syrup
  • 1 tsp vanilla extract
  • ½ cup dark chocolate chunks

  • 1 food processor

Method
 

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper and set it aside.
  2. In a food processor, blend all the ingredients together (not the chocolate) until smooth.
  3. Pour the mixture into the lined baking dish and smooth the top.
  4. Sprinkle the chocolate chunks over top of the batter.
  5. Bake for 20-25 minutes, or until the edges are golden brown and the center is set.
  6. Remove from the oven and allow to cool for 10 minutes in the baking dish.
  7. Once cooled, remove the blondies from the baking dish using the parchment paper and transfer to a wire rack to cool completely
