  • ½ cup gluten-free rolled oats
  • 1 tbsp chia seeds
  • 2 tbsp cocoa powder
  • 1 tbsp creamy peanut butter (make sure it's gluten-free and dairy-free)
  • 1 tbsp maple syrup or honey (optional, adjust sweetness to taste)
  • ½ cup almond milk (or any other dairy-free milk of your choice)
  • ¼ tsp vanilla extract
  • A pinch of salt

Method
 

  1. Mix Dry Ingredients: In a medium-sized bowl or jar, combine the rolled oats, chia seeds, cocoa powder, and a pinch of salt.
  2. Add Wet Ingredients: Add the creamy peanut butter, almond milk, and vanilla extract to the bowl or jar. If using, add maple syrup or honey for sweetness. Stir well to combine, ensuring the peanut butter is evenly distributed throughout the mixture.
  3. Combine and Refrigerate: Cover the bowl or jar with a lid or plastic wrap and place it in the refrigerator. Let it sit overnight, or for at least 4-6 hours, to allow the oats and chia seeds to absorb the liquid and soften
  4. Serve and Enjoy: The next morning, give the mixture a good stir. If the oats seem too thick, you can add a splash of almond milk to reach your desired consistency. Taste and adjust sweetness if necessary by adding more maple syrup or honey.
  5. Add Toppings (Optional): Serve the overnight oats in bowls and top with sliced bananas, chopped nuts, or an extra dollop of peanut butter for added flavor and texture.
