Ingredients
  

  • 1 egg
  • 2 tbsp coconut oil, melted
  • ¼ cup shredded coconut
  • 3 tbsp honey or maple syrup (adjust to taste)
  • ½ cup tahini
  • ¼ cup arrowroot flour
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • ¼ tsp baking soda
  • ¼ cup dairy-free chocolate chips

Method
 

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the egg, melted coconut oil, shredded coconut, honey or maple syrup, tahini, and vanilla extract until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, stirring until a thick cookie dough forms.
  4. Fold in the dairy-free chocolate chips until evenly distributed throughout the dough.
  5. Using a tablespoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie.
  6. Flatten each cookie slightly with the back of a spoon or your fingers.
    Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  7. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
