FLUFFY PUMPKIN MAPLE PANCAKES

These Pumpkin Maple Pancakes are the easiest fall breakfast you'll ever make! With just two main ingredients—pumpkin puree and eggs—you can whip up a batch of warm, fluffy pancakes in no time.

Ingredients
  

  • 1 cup pumpkin puree
  • 3 eggs
  • 2 tbsp maple syrup (adjust to taste)
  • 1 tsp vanilla extract
  • ½ tsp baking powder (optional, for fluffiness)
  • ½ tsp salt (optional)

Method
 

  1. Mix Ingredients: In a bowl, whisk together all the ingredients.
  2. Preheat Pan: Heat a non-stick frying pan or skillet over medium heat. You can lightly grease it with a bit of coconut oil or any preferred oil.
  3. Cook Pancakes: Pour about 1/4 cup of the batter onto the pan for each pancake. Spread it slightly to form a round shape.
  4. Flip Gently: Cook the pancake for about 2-3 minutes until bubbles start to form on the surface and the edges are firm. Flip carefully with a spatula, then cook for another 2 minutes on the other side until golden brown.
  5. Serve: Remove from the pan and repeat with the remaining batter. Serve warm with a drizzle of extra maple syrup on top!
