CRUNCHY PEANUT BUTTER AND OREO FUDGE BARS

These bars are perfect for any occasion, whether you're looking for a delicious treat to enjoy with friends and family, or simply want to satisfy your sweet tooth. The crunchy texture of the peanut butter and Oreos pairs perfectly with the smooth and creamy fudge layer, creating a mouth-watering flavor explosion that you won't be able to resist.

Ingredients
  

  • 1 cup crushed oreos
  • 1 cup quinoa puffs 
  • 2 tbsp coconut oil
Peanut Butter Base:
  • 1 cup smooth peanut butter
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 2 tbsp gluten free oats
Chocolate base:
  • 1-2 large dark chocolate bars
  • 3 tbsp coconut oil
  • Oreos and white chocolate drizzle for the top

Method
 

  1. In a small bowl, combine oreos, puffs and coconut oil. Mix together. 
  2. Using a 9×12 baking dish, evenly spread the Oreo base around. 
  3. In a separate bowl, combine all the peanut butter base ingredients together. Evenly spread the peanut butter over the oreo base. 
  4. Using a small bowl, place the chocolate and the coconut oil in the microwave for 30 seconds. Remove and stir. Place it back in the microwave for another 30 seconds. Remove from the microwave and stir until all the chocolate is a smooth liquid. 
  5. Pour the chocolate over the peanut butter. 
  6. Add a few Oreo cookies over top with any additional toppings you want to add. 
  7. Place your crunchy peanut butter and Oreo fudge in the freezer for three hours. Once frozen, remove from the freezer to the fridge.
