Ingredients
  

  • 6-8 Rice paper wrappers
  • 3 cups Sushi rice (cooked and seasoned)
  • 2 Cucumber, julienned
  • 2 avocado, thinly sliced
  • 2 Carrots, julienned
Spicy Peanut Dipping Sauce for Crispy Rice Rolls
  • ½ cup creamy peanut butter
  • 2 tbsp gluten-free soy sauce (or tamari for a gluten-free option)
  • 1 tbsp rice vinegar
  • 1 tbsp lime juice
  • 2 tsp honey or maple syrup
  • 1-2 tsp sriracha or your favourite hot sauce (adjust to taste)
  • 1 clove garlic, minced
  • 1 tsp ginger, minced
  • ¼ cup warm water (more if needed for desired consistency)

Method
 

  1. Prepare the Sushi Rice: Start by cooking the sushi rice according to the package instructions. Once cooked, let it cool and then season it with a mixture of rice vinegar, sugar, and salt. This step is crucial for achieving that authentic sushi flavor
  2. Prep Your Veggies: While the rice is cooling, prepare your vegetables. Julienne the cucumber and carrots into thin strips. Thinly slice the avocado.
  3. Soften the Rice Paper Wrappers: Fill a large shallow dish with warm water. Dip each rice paper wrapper in the water for about 5-10 seconds until it becomes soft and pliable. Be careful not to soak them too long, or they might tear.
  4. Assemble the Rolls: Lay the softened rice paper on a clean, flat surface. Place a small amount of sushi rice in the center, spreading it out slightly. Add a few strips of cucumber, carrot, and a slice or two of avocado.
  5. Roll Them Up: Fold the sides of the rice paper over the filling, then roll from the bottom up, tucking the filling in as you go to form a tight roll.
  6. Crisp Them Up (Optional): If you want to add a crispy element to your rolls, lightly brush them with oil and pan-fry them in a non-stick skillet until golden and crispy on all sides.
  7. Serve and Enjoy: Serve your crispy rice rolls with your favourite dipping sauce. Soy sauce, tamari (for a gluten-free option), or a spicy peanut sauce all make excellent accompaniments.

  1. Mix the Ingredients: In a medium bowl, combine the peanut butter, soy sauce, rice vinegar, lime juice, honey, sriracha, minced garlic, and minced ginger.
  2. Adjust Consistency: Gradually add warm water, whisking continuously until the sauce reaches your desired consistency. You can make it thicker for a more robust dipping sauce or thinner if you prefer a lighter drizzle
  3. Taste and Adjust: Taste the sauce and adjust the flavors as needed. Add more sriracha if you like it spicier, more honey for sweetness, or more lime juice for tanginess.
