- Prepare the Sushi Rice: Start by cooking the sushi rice according to the package instructions. Once cooked, let it cool and then season it with a mixture of rice vinegar, sugar, and salt. This step is crucial for achieving that authentic sushi flavor
- Prep Your Veggies: While the rice is cooling, prepare your vegetables. Julienne the cucumber and carrots into thin strips. Thinly slice the avocado.
- Soften the Rice Paper Wrappers: Fill a large shallow dish with warm water. Dip each rice paper wrapper in the water for about 5-10 seconds until it becomes soft and pliable. Be careful not to soak them too long, or they might tear.

- Mix the Ingredients: In a medium bowl, combine the peanut butter, soy sauce, rice vinegar, lime juice, honey, sriracha, minced garlic, and minced ginger.
- Adjust Consistency: Gradually add warm water, whisking continuously until the sauce reaches your desired consistency. You can make it thicker for a more robust dipping sauce or thinner if you prefer a lighter drizzle
