CREAMY AVOCADO COLESLAW CHOPPED SALAD

Get in on the chopped salad trend with our Creamy Avocado Coleslaw! It's as easy as chopping fresh veggies on your cutting board and tossing them together.

Ingredients
  

coleslaw:
  • 1 head of cabbage, finely chopped
  • 2 carrots, grated
Creamy Avocado Dressing
  • ½ ripe avocado
  • 1 clove garlic, minced
  • ¼ cup apple cider vinegar
  • 1 cup olive oil
  • 1 tbsp nutritional yeast
  • ¼ cup chopped green onions
  • A handful of fresh cilantro leaves, chopped
  • Pinch of salt, to taste
  • 2 slices of Gluten-Free Bread

Method
 

  1. On a large cutting board place your coleslaw ingredients down and combine.
  2. In a large bowl add all the dressing ingredients and blend until smooth or texture you prefer.
  3. Pour the creamy avocado dressing over the chopped vegetables.
  4. Toss the salad until all the vegetables are evenly coated with the creamy dressing.
    Taste and adjust seasoning with more salt if needed.
  5. Place a few spoonfuls of the chopped salad onto your bread and enjoy a healthy sandwich!
