Prepare the Salad Ingredients:
- Wash and dry the kale leaves thoroughly. Remove the tough stems and chop the leaves into bite-sized pieces. Place them in a large salad bowl.Thinly slice the green cabbage, apples, cucumber, celery, and red onions. Add them to the same bowl with the kale.
Prepare the Dressing:
- In a small bowl, whisk together all the dressing ingredients. Taste the dressing and adjust the sweetness and seasoning to your liking.
Combine and Toss:
- Pour the dressing over the salad ingredients in the large bowl. Toss everything together until the dressing coats the vegetables and kale evenly.
Let It Rest:
- Allow the salad to sit for about 10-15 minutes before serving. This will help the flavors meld together and soften the kale slightly.
Add Sunflower Seeds:
- Just before serving, sprinkle the toasted sunflower seeds over the top of the salad for an added crunch.
