
Ingredients
- 2 cups of corn
- 1 chopped red pepper
- 1 chopped yellow pepper
- 1 tomato
- 1 shallot
- 1 clove of garlic
- 1 cup of chopped green onions
- 1 can of black beans
- 1 pound of ground turkey
- 1 tbsp of olive oil
- 1 1/2 tsp of salt
- 1 tsp of pepper
- 2 tsps of parikpa
- 1 tbsp of nutritionist yeast
- 3 cups of cooked rice
- A bunch of cilantro
- Half an avocado
- mozzarella cheese (optional)
Directions
- Preheat the oven to 400 degrees.
- Using a large skillet, fry the corn, peppers, tomatoes, shallot, garlic and onion on medium heat. Add a touch of olive oil. Fry the vegetables for 4-6 minutes or until soften.
- Add in the ground turkey, black beans and the seasonings. Cook on low heat for 30 minutes or until cooked through.
- Using a baking dish, place the cooked rice, cooked vegetables along with the meat and combine. Sprinkle the nutritionist yeast throughout the rice dish. (Optional: cover the rice casserole with mozzarella cheese)
- Place the turkey rice casserole into the oven for 15 minutes. Once baked, place the avocado and cilantro overtop.
