TOMATO DILL SOUP

Ingredients

  • 2 fresh tomatoes, sliced
  • 1 large yellow onion, sliced 
  • 2 cloves of garlic
  • 1/2 butternut squash (peeled and diced)
  • 1/2 celery root (peeled and diced)
  • 1 can of diced tomatoes
  • 1/3 cup of white wine vinegar
  • 2 cups of chicken broth
  • 4 cups of water 
  • 1 tbsp of nutritional yeast 
  • 1 tbsp of lemon pepper
  • 2 tsp of salt 

Directions

  1. Using a large pot on medium heat, saute your tomatoes, onion and garlic with some olive oil. Saute for 4 minutes. 
  2. Add in all the remaining ingredients. 
  3. Cook on low heat for 3 hours, this way the true flavour will come. 
  4. Enjoy it with some crackers or garlic bread!
