Ingredients
- 2 fresh tomatoes, sliced
- 1 large yellow onion, sliced
- 2 cloves of garlic
- 1/2 butternut squash (peeled and diced)
- 1/2 celery root (peeled and diced)
- 1 can of diced tomatoes
- 1/3 cup of white wine vinegar
- 2 cups of chicken broth
- 4 cups of water
- 1 tbsp of nutritional yeast
- 1 tbsp of lemon pepper
- 2 tsp of salt
Directions
- Using a large pot on medium heat, saute your tomatoes, onion and garlic with some olive oil. Saute for 4 minutes.
- Add in all the remaining ingredients.
- Cook on low heat for 3 hours, this way the true flavour will come.
- Enjoy it with some crackers or garlic bread!
