
Ingredients
- 5 dates
- 4 figs
- 1/3 cup of cashews
- 1/3 cup of pecans
- 1/3 cup of pumpkin seeds
- 2/3 cup of oats
- 2/3 cup of pumpkin puree
- 1 tbsp coconut oil
Chocolate Dip:
- 1 cup chocolate chips
- 1/2 tbsp coconut oil
Directions
- Pulse all ingredients in a food processor until well mixed.
- Scoop mixture and roll into small bites. Freeze until solid.
- While the pumpkin bites are freezing, make the chocolate chip dip. Combine the ingredients together in a bowl. Microwave for 30 seconds, stir and microwave again for another 30 seconds. This should make the chocolate a perfect consistency to dip the pumpkin bites.
