 This is my personal story of my health journey that I hope will resonate with some of you. A few years ago, I was suffering from terrible symptoms that left me feeling exhausted, bloated, and constantly not myself. After visiting countless doctors and undergoing numerous tests, I was still left with no answers. I felt hopeless and defeated, and I couldn’t understand why my body was betraying me.

But I refused to give up. I continued to do my own research and ask for more tests until I finally discovered that I had Celiac Disease. It was a relief to finally have an answer, but it was also overwhelming to realize that I needed to make significant changes to my diet and lifestyle.

I had to learn how to cook and eat in a completely different way, avoiding gluten products. It wasn’t easy, but I was determined to take care of myself and not let my health issues impact my family. I spent countless hours researching and experimenting in the kitchen, trying to find delicious and nutritious alternatives to my favourite foods.

The journey was not easy, and I often felt discouraged and alone. But I found strength in the support of my loved ones and in the knowledge that I was taking control of my health. And now, I want to share my story with others who may be struggling with similar health issues.

If you are experiencing unexplained symptoms, I urge you to trust your instincts and advocate for yourself. Do your own research, and don’t give up until you find the answers you need. 4 people per serving for the dinner recipes, as for the lunch and breakfast recipes that is 2-4 serving but can easily be doubled for more servings.

I recommend dedicating some time over the weekend to grocery shopping and preparing a few items from the menu. While the recipes for the week only require 5-30 minutes of preparation time, they offer several servings. With the provided grocery list, the shopping process will be quick.
