MOSS COOKIES

Matcha green tea cookies

Ingredients

  • 2 3/4 cups of almond flour
  • 1 tsp of baking powder
  • 1 tsp of arrowroot flour 
  • 1/3 cup of coconut sugar
  • 1 tbsp of matcha powder
  • 1/3 cup of chocolate chips
  • 1/2  tsp of salt
  • 1 egg
  • 1 tsp of vanilla extract 
  • 1/3 cup of oat milk 

Topping:

  • 1 tbsp of matcha powder
  • 1 cup of ground rolled oats
  • 2 tbsp of rolled oats
  • 1/3 cup of honey 

Directions

  1. Preheat the oven to 350 degrees. Line a baking pan with parchment paper and set aside.
  2. In a large bowl add all the cookie dry ingredients together. Mix well. 
  3. Add in the wet ingredients and combine all the ingredients. 
  4. Roll 2 tbsp of the dough into balls and place them evenly spaced on your prepared cookie sheet. 
  5. Bake for 11 minutes. 
  6. When the cookies are baking, use a small bowl and combine 1 tbsp of the  matcha powder and the ground rolled oats together. In a separate bowl combine 1 tbsp of the matcha powder and the 1 tbsp of the rolled oats.
  7. Take the cookies out and let them sit on the baking pan for 2 minutes before removing them to a cooling rack.
  8. Let them rest for 20 minutes. 
  9. Once cooled, drizzle honey over the top of each of them. Dip them in the matcha powder and ground oat mixture. Followed by sprinkling the rolled oats over top. 
  10. There you have it – Your own moss cookies.
