
Ingredients
- 2 3/4 cups of almond flour
- 1 tsp of baking powder
- 1 tsp of arrowroot flour
- 1/3 cup of coconut sugar
- 1 tbsp of matcha powder
- 1/3 cup of chocolate chips
- 1/2 tsp of salt
- 1 egg
- 1 tsp of vanilla extract
- 1/3 cup of oat milk
Topping:
- 1 tbsp of matcha powder
- 1 cup of ground rolled oats
- 2 tbsp of rolled oats
- 1/3 cup of honey
Directions
- Preheat the oven to 350 degrees. Line a baking pan with parchment paper and set aside.
- In a large bowl add all the cookie dry ingredients together. Mix well.
- Add in the wet ingredients and combine all the ingredients.
- Roll 2 tbsp of the dough into balls and place them evenly spaced on your prepared cookie sheet.
- Bake for 11 minutes.
- When the cookies are baking, use a small bowl and combine 1 tbsp of the matcha powder and the ground rolled oats together. In a separate bowl combine 1 tbsp of the matcha powder and the 1 tbsp of the rolled oats.
- Take the cookies out and let them sit on the baking pan for 2 minutes before removing them to a cooling rack.
- Let them rest for 20 minutes.
- Once cooled, drizzle honey over the top of each of them. Dip them in the matcha powder and ground oat mixture. Followed by sprinkling the rolled oats over top.
