
Ingredients
- 1 cup of millet flour
- 1 cup of ground oat flour
- 1/2 cup of oats
- 1 tsp of baking powder
- 1/3 cup of coconut sugar
- 1/2 tsp of salt
- 2 bananas
- 1 tbsp of lemon juice
- 1 1/2 cups of oat milk
- 1 flaxseed egg
- 1 cup of fresh blueberries
Directions
- Preheat the oven to 350F.
- Grease your muffin cups
- In a large bowl, mix dry ingredients together really well.
- In a small bowl, mix wet ingredients together. (Not the blueberries)
- Add the wet ingredients to your dry ingredients and combine.
- Fold in your blueberries.
- Bake for 15 minutes or until golden brown on the top.

Its gluten free and also vegan. But do remember you can always sub the GF flours for regular flours too. This also goes with flaxseed egg, you can use a regular egg instead.
This recipe makes about 10-12 mini blueberry muffins.
