This gluten-free pizza dough is made from sweet potatoes! Vegan and super easy to make. Everything in one bowl. Bake and complete! Ingredients

pizza dough ingredients:

  • 1 cup mashed sweet potato (cooked and cooled)
  • 1 ½ cups oat flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon dried oregano
  • ½ teaspoon ground pepper
  • 1-2 tablespoons nutritional yeast

Spinach pesto ingredients:

  • 2 cups fresh spinach leaves
  • 1 cup fresh basil leaves
  • 2 green onions, chopped
  • 2 cloves of garlic (minced)
  • ¼ cup cashews
  • ¼ cup olive oil
  • ½ teaspoon salt (or to taste

Topping:

  • dried chickpeas,
  • sliced tomatoes,
  • lettuce leaves,
  • fresh basil,
  • minced garlic

Here are some substitute ingredients you can use for the toppings in the “Mediterranean Delight Pizza” recipe:

Sweet Potato Dough

  • 1 cup mashed sweet potato (cooked and cooled)

  • 1-2 tbsp nutritional yeast

Spinach Pesto Sauce

  • 2 cups fresh spinach leaves
  • 1 cup fresh basil leaves
  • 1 green onions, chopped
  • ¼ cup cashews
  • ¼ cup olive oil
  • salt (or to taste)

Toppings

  • ¼ cup dried chickpeas
  • ½ cup chopped, tomatoes
  • ½ cup lettuce leaves
  • ¼ cup fresh basil
  • 1 tbsp minced garlic

Instructions
 

Dough

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  • In a large mixing bowl, combine the mashed sweet potato, oat flour, baking powder, salt, oregano, pepper, and nutritional yeast. Mix well until the ingredients are evenly incorporated.
  • Remove the dough from the bowl and place it on the prepared baking sheet. Use your hands or a rolling pin to shape the dough into your desired pizza crust thickness. You can make it thin and crispy or thicker for a more doughy texture.
  • Place the baking sheet with the dough in the preheated oven and bake for about 10-12 minutes until the edges start to slightly golden.
  • Remove the partially baked dough from the oven and let it cool slightly.

pesto sauce

  • In a blender or food processor, add the fresh spinach leaves, basil leaves, chopped green onions, cashews, olive oil, and salt
  • Blend or process the ingredients until they form a smooth and creamy sauce. You may need to stop and scrape down the sides of the blender or food processor a few times to ensure everything is well combined.
  • Taste the pesto sauce and adjust the salt if necessary. Add more olive oil if you prefer a thinner consistency.
  • Once the pesto sauce is ready, you can spread it on your pizza dough as a base sauce. Use a spoon or spatula to evenly distribute the pesto over the dough, leaving a small border around the edges for the crust.
