- 1 fennel
- 1 orange
- 1 pomegranate
- 1/2 cup of pecans
- 2 cups of arugula
Citrus and honey mustard vinaigrette
- 3 tbsp of orange juice
- 2 tbsp of lemon juice
- 1 tbsp of red wine vinegar
- 1 tbsp of honey mustard
- 1 tbsp of honey
- 1/3 cup of olive oil
- Add: Salt and pepper to your tasting.

Fennel, Orange and Pecan Salad is a refreshing and flavorful salad that combines the unique taste of fennel with the sweetness of oranges and the crunch of pecans.
Ingredients
-1 fennel-1 orange
-1 pomegranate
-1/2 cup of pecans
-2 cups of arugula
Citrus and honey mustard vinaigrette
-3 tbsp of orange juice
-2 tbsp of lemon juice
-1 tbsp of red wine vinegar
-1 tbsp of honey mustard
-1 tbsp of honey
-1/3 cup of olive oil
-Add: Salt and pepper to your tasting.
Directions
- Cut the top and bottom of the orange with the knife, then slice off the skin on all sides of the orange.
- Once all the skin has been removed, place the orange on its side, then slice through the orange from top to bottom making a circular ring.
- Remove the pulp and deseed you’re pomegranate.
- Place your salad ingredients in a large salad bowl.
- In a separate small bowl, whisk together the orange juice, lemon juice, honey mustard, honey, salt and pepper.
- Pour the dressing over the salad and toss to combine.
- Let the salad sit for at least 15 minutes to allow the flavors to meld. Serve and enjoy!
