Here are few substitutes you could use for this recipe, depending on your dietary restrictions or personal preferences:

  1. Seed Substitutes: You can substitute the pumpkin seeds with other types of seeds such as sunflower seeds, chia seeds or sesame seeds.
  2. Flour Substitutes: You can substitute the teff flour with other gluten-free flours such as brown rice flour, sorghum flour or oat flour. However, keep in mind that each of these flours has a slightly different taste and texture, so it may affect the final result of the crackers.
  3. Oil Substitutes: You can substitute the sunflower oil with other neutral-flavored oils such as vegetable oil or coconut oil.
  4. Seasoning Substitutes: If you don’t have everything bagel seasoning on hand, you can make your own by combining equal parts sesame seeds, poppy seeds, dried onion flakes, dried garlic flakes, and salt.
  5. Binding Agent Substitutes: If you don’t have cornstarch on hand, you can use tapioca starch, arrowroot starch, or potato starch instead.
