- 1/3 cup coconut oil, melted
- 3/4 cup brown sugar
- 1 large egg

Together, the combination of almond flour, coconut oil, and gluten free oats create a delicate balance of nutty, sweet, and crunchy flavours in a cookie. These ingredients also help create a soft and chewy texture, making the gluten free cookies delicious and satisfying to eat.
Here are some possible substitute ingredients for these gluten-free cookies:
-
Almond flour: This ingredient is already gluten-free, so no substitute is needed.
-
Rolled oats: Look for certified gluten-free rolled oats, as oats can be cross-contaminated with gluten during processing. You could also use quinoa flakes or shredded coconut as a substitute.
-
Coconut oil: You could use any other type of vegetable oil such as canola or sunflower oil as a substitute.
-
Brown sugar: You could use coconut sugar or maple sugar as a substitute.
-
Egg: You could use a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes to thicken) or a chia egg (1 tablespoon chia seeds mixed with 3 tablespoons water, let sit for 5 minutes to thicken) as a substitute.
-
Chocolate chips: Use dairy-free chocolate chips, or you could also use chopped nuts, dried fruit, or cacao nibs as a substitute.
