- Preheat the oven to 400F 2. Slice your chicken breasts into 1-2 inch thick slices 3. Add salt and pepper to the chicken, before sautéing. 4. Using a cast iron skillet on medium heat, sauté each chicken side for 1 minute. 5. Remove the chicken from the skillet and add in your artichokes, water, coconut milk, garlic and mustard. 6. Cook the sauce on medium heat for 4 minutes. 7. Add your chicken to your artichoke sauce, followed by adding in a bay leaf. 8. Place your chicken in the oven to cook for 25 minutes. 9. Remove from the oven and add in your spinach. Stir until combined. Serve and enjoy!
