BROCCOLI RAISIN SALAD with apples and vegan

This gluten free and vegan BROCCOLI RAISIN salad is a mixture of sweet and savoury ingredients. It consists of broccoli florets, raisins, diced apples, edamame beans, pecan pieces, and mint leaves. The broccoli and edamame provide a crunchy texture and are rich in nutrients, while the raisins, apples, and pecans add a touch of sweetness. Plus the mint leaves add a refreshing and aromatic flavour to the dish.

Ingredients

  • 2 cups of broccoli florets
  • 1 1/2 cups of diced apples
  • 1/2 cup of raisins
  • 1/2 cup of edamame beans
  • 1/4 cup of pecans

Dressing

  • 1 cup of olive oil
  • 1/3 cup of balsamic vinegar
  • 1/2 cup of non-dairy yogurt (I used coconut )
  • handful of fresh mint leaves
  • 1 tbsp of mustard
  • 1 tsp of lemon juice
  • salt to taste

This salad dressing makes the salad come together perfectly, especially with the addition of mint leaves. Enhancing the overall taste of the dressing, adding a unique and refreshing taste.

Another great recipe for a dairy-free and gluten-free broccoli raisin salad dressing that you can use as a substitute includes ingredients:

  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Ingredients
  

  • 2 cups broccoli florets
  • cup diced apples
  • ½ cup raisins
  • ½ cup edamame beans
  • ¼ cup  pecans

Dressing

  • 1 cup olive oil
  • cup balsamic vinegar
  • ½ cup non-dairy yogurt (I used coconut )
  • A handful of fresh mint leaves
  • 1 tbsp mustard
  • 1 tsp lemon juice
  • salt to taste

Instructions
 

  • Using a salad bowl, add broccoli, apples, raisins, edamame beans and toasted pecans.
  • To make the vinaigrette add all the ingredients together and mix well. Add your Vinaigrette to the salad and enjoy!
