Ingredients
- 2 cups of broccoli florets
- 1 1/2 cups of diced apples
- 1/2 cup of raisins
- 1/2 cup of edamame beans
- 1/4 cup of pecans
Dressing
- 1 cup of olive oil
- 1/3 cup of balsamic vinegar
- 1/2 cup of non-dairy yogurt (I used coconut )
- handful of fresh mint leaves
- 1 tbsp of mustard
- 1 tsp of lemon juice
- salt to taste
