
Ingredients
Crepe:
- 1/2 cup of almond flour
- 1/2 cup of millet flour
- 1 scoop of protein powder
- 1/2 tsp of xanthan gum
- 1 tbsp of coconut sugar
- 2 eggs
- 1 tsp of vanilla extract
- 2 tbsp of coconut oil
- 1/2 cup of oat milk
- 1/2 cup of water
Fruit:
- 1 cup of sliced strawberries
- 1 sliced banana
- 2 sliced kiwis
Coconut flake mixture:
- 1/3 cup of coconut flakes
- 1 tbsp of coconut sugar
- 1/4 cup of chopped walnuts
Drizzle:
- 1/3 cup of honey
Directions
- In a large bowl, whisk together the dry ingredients for the crepe. Gradually add in the wet ingredients, stirring to combine. Beat until smooth.
- Heat a frying pan over medium heat. Using a large spoon, scoop the batter onto the pan. Cook each side for 1 minute.
- Using skewers, place the fruit onto the skewers.
- In a small bowl, combine all the coconut flake mixture together. Place the mixture onto a flat surface.
- Take each fruit skewer and roll the skewer through the coconut flake mixture.
- Over each crepe drizzle honey and place the fruit over top. Roll the crepe with the fruit skewer inside. Onced rolled, drizzle more honey over top and sprinkle some of the coconut flake mixture too. Remove the skewer before enjoying it!
Need a fun Saturday morning breakfast!? I love crepes and I also love healthier versions of them too. These aren’t regular crepes. They are slightly thicker than regular crepes and slightly more filling! These are gluten free, dairy free and filled with protein.
