
Ingredients
French toast
- 4 eggs
- 1/2 cup of almond milk
- 6 slices of bread that are cut into cubes
- 1 tbsp of maple syrup
- 1 tsp of vanilla extract
- 1 tsp of cinnamon
- 1 tsp of salt
Granola topping
- 1/2 cup of oats
- 1/3 cup of almond flour
- 1 cup of chopped walnuts
- 1 tsp of cinnamon
To serve: Maple syrup or ice cream or whipped cream (or everything!)
Directions
- In a large casserole dish, add in the cubed bread. In a medium size bowl, whisk the eggs and milk together. Add in the maple syrup, vanilla, cinnamon and salt. Combine and pour over the bread.
- Make sure all the bread is well coasted. Place the dish in the fridge for an overnight soak.
- As for the topping add all the ingredients into a bowl and mix well. Place in the fridge overnight.
- In the morning, preheat the oven to 350 degrees.
- Using a spoon, scatter the topping evenly around the bread.
- Bake for 30 minutes. Be sure that all the bread is evenly cooked and there is little wobbling.
- Serve with your favourite topping!
One of my favourite go-to-meal preps! Make it in the evening and wake up to an irresistibly delicious breakfast! It super easy and quick. I love how fluffy and tender the inside is and how gloriously crispy the top is. Try it for one of your back-to-school breakfasts!
Substitute: Almond milk for 2% milk and gluten-free bread for whole grain bread.
