  • 1 tbsp of lemon juice
  • 2 tbsp of chopped parsley
  • 1 tsp of honey mustard
  • pinch of salt and pepper

    Ingredients

    -1 honey crisp apple

    -1/2 celery root

    Creamy dairy-free dressing

    -1/2 can of coconut milk

    -1 tbsp of lemon juice

    -2 tbsp of chopped parsley

    -1 tsp of honey mustard

    -pinch of salt and pepper


    Directions

    1. In a large mixing bowl, combine the julienned celery root and thinly sliced apples.
    2. In a separate small mixing bowl, whisk together the coconut milk, lemon juice, parsley, mustard and salt and pepper until well combined.
    3. Pour the dressing over the salad and toss until all of the ingredients are well coated.
    4. Allow the salad to sit for at least 10-15 minutes before serving, to allow the flavors to meld together.
    5. Serve the salad chilled, garnished with additional chopped parsley or chives if desired.
