  • 1/3 cup of brown sugar
  • pinch of salt and cinnamon
  • 1 cup of mixed berries

Ingredients

-1 1/3 cup of almond flour

-1/2 cup of chickpea flour

-1 stick of vegan butter, melted slightly

-2 eggs, room temperature

-1 tsp of baking powder

-1/2 tsp of vanilla extract

-1/3 cup of brown sugar

-pinch of salt and cinnamon

-1 cup of mixed berries


Directions

  1. Preheat your oven to 350°F (175°C) and grease a 8-inch cake pan with cooking spray.
  2. In a medium bowl, whisk together the flours, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the eggs, sugar, and butter until light and fluffy.
  4. Add in the vanilla extract.
  5. Gradually add the butter mixture to the flour mix until well combined.
  6. Pour the batter into the prepared cake pan and gently place the fresh berries on top. Press them down slightly into the batter.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. Serve the cake sliced, topped with additional fresh berries and sliced almonds if desired.
