BROCCOLI RAISIN SALAD with apples and vegan

This salad is a mixture of sweet and savory ingredients. It consists of broccoli florets, raisins, diced apples, edamame beans, pecan pieces, and mint leaves. The broccoli and edamame provide a crunchy texture and are rich in nutrients, while the raisins, apples, and pecans add a touch of sweetness. The mint leaves add a refreshing and aromatic flavour to the dish.

Ingredients

  • 2 cups of broccoli florets
  • 1 1/2 cups of diced apples
  • 1/2 cup of raisins
  • 1/2 cup of edamame beans
  • 1/4 cup of pecans

Dressing

  • 1 cup of olive oil
  • 1/3 cup of balsamic vinegar
  • 1/2 cup of non-dairy yogurt (I used coconut )
  • handful of fresh mint leaves
  • 1 tbsp of mustard
  • 1 tsp of lemon juice
  • salt to taste

This salad dressing makes the salad come together perfectly, especially with the addition of mint leaves. Enhancing the overall taste of the dressing, adding a unique and refreshing taste.

Ingredients

-2 cups of chopped broccoli

-1 1/2 cups of diced apples

-1/2 cup of raisins

-1/2 cup of edamame beans

-1/4 cup of toasted pecans

Vinaigrette

-1 cup of olive oil

-1/3 cup of balsamic vinegar

-1/2 cup of non-dairy yogurt (I used coconut )

-handful of fresh mint leaves

-1 tbsp of mustard

-1 tsp of lemon juice

-salt to taste

Directions

  1. Using a salad bowl, add broccoli, apples, raisins, edamame beans and toasted pecans.
  2. To make the vinaigrette add all the ingredients together and mix well.
  3. Add your Vinaigrette to the salad and enjoy!
