This salad features a combination of grapefruit for a citrusy burst of flavor, paired with the nuttiness of Brussel sprouts and the peppery bite of watercress. It is finished off with a sprinkle of crunchy pistachios and a touch of bitter radicchio for added depth and complexity.
This recipe is dairy free and gluten-free and can be made in 15 minutes! Keeping it simple.
Ingredients
- 1 grapefruit
- 1 cup of Brussel Sprouts
- 1/2 cup of watercress
- 1 radicchio
- 2 cups of arugula
- 1/2 cup of pistachio
- 1/3 cup of pickled onions
- 1 – 1/2 avocado
Vinaigrette
- 1 tbsp dried basil
- 1 shallot
- 3 tbsp olive oil
- 1 tbsp of apple cider vinegar
- 1 tbsp of lemon juice
- 1 tbsp of mustard
- season with salt and pepper

RADICCHIO SALAD WITH CITRUS

Ingredients
-1 grapefruit, sliced into segments-1 cup of Brussel Sprouts, thinly chopped
-1/2 cup of watercress, chopped
-1 radicchio, pulled apart
-2 cups of arugula
-1/2 cup of pistachio
-1/3 cup of pickled onions
-1 – 1/2 avocado, thinly sliced
Lemon Vinaigrette
-1 tbsp dried basil
-1 shallot
-3 tbsp olive oil
-1 tbsp of apple cider vinegar
-1 tbsp lemon juice
-1 tbsp of mustard
-season with salt and pepper
Directions
- Using a salad bowl, add in your radicchio. (I like mine still in large leaf, this way I just use my knife and fork to cut away)
- Next, add your arugula, Brussel sprouts and watercress.
- Add your final toppings, pistachios, pickled onions, avocado and grapefruit.
- To make the vinaigrette add all the ingredients together and mix well.
- Add your Vinaigrette to the salad and enjoy!
