RADICCHIO SALAD WITH CITRUS

Healthy radicchio citrus salad

Add some depth and complexity to your next salad.

This salad features a combination of grapefruit for a citrusy burst of flavor, paired with the nuttiness of Brussel sprouts and the peppery bite of watercress. It is finished off with a sprinkle of crunchy pistachios and a touch of bitter radicchio for added depth and complexity.

This recipe is dairy free and gluten-free and can be made in 15 minutes! Keeping it simple.

Ingredients

  • 1 grapefruit
  • 1 cup of Brussel Sprouts
  • 1/2 cup of watercress
  • 1 radicchio
  • 2 cups of arugula
  • 1/2 cup of pistachio
  • 1/3 cup of pickled onions
  • 1 – 1/2 avocado

Vinaigrette

  • 1 tbsp dried basil
  • 1 shallot
  • 3 tbsp olive oil
  • 1 tbsp of apple cider vinegar
  • 1 tbsp of lemon juice
  • 1 tbsp of mustard
  • season with salt and pepper

Very few people add watercress to their meals but did you know watercress is a good source of vitamins C and K, as well as calcium, iron, and antioxidants. It may have anti-inflammatory and anti-cancer properties. Eating watercress regularly can help improve cardiovascular health, lower blood pressure, and boost the immune system. Alway a great reason why to try new ingredients that are healthy.

Ingredients

-1 grapefruit, sliced into segments

-1 cup of Brussel Sprouts, thinly chopped

-1/2 cup of watercress, chopped

-1 radicchio, pulled apart

-2 cups of arugula

-1/2 cup of pistachio

-1/3 cup of pickled onions

-1 – 1/2 avocado, thinly sliced

Lemon Vinaigrette

-1 tbsp dried basil

-1 shallot

-3 tbsp olive oil

-1 tbsp of apple cider vinegar

-1 tbsp lemon juice

-1 tbsp of mustard

-season with salt and pepper

Directions

  1. Using a salad bowl, add in your radicchio. (I like mine still in large leaf, this way I just use my knife and fork to cut away)
  2. Next, add your arugula, Brussel sprouts and watercress.
  3. Add your final toppings, pistachios, pickled onions, avocado and grapefruit.
  4. To make the vinaigrette add all the ingredients together and mix well.
  5. Add your Vinaigrette to the salad and enjoy!
