CHICKEN WITH ARTICHOKE SAUCE recipe

This is one of those amazing chicken recipes.

Ingredients

  • 3 Chicken breasts
  • 1 tsp of salt
  • 1 tsp of pepper
  • 1 cup of artichokes (I used a jar of artichokes)
  • 1/2 cup of water (You could also use chicken broth)
  • 1 cup of coconut milk
  • 1 tbsp of garlic powder
  • 1 tbsp of mustard
  • 1 bay leaf
  • 1-2 cups of spinach

Artichokes are a low-calorie and nutrient-dense vegetable. They are an excellent source of fiber, vitamins, and minerals such as folate, magnesium and vitamin K.

Ingredients

-3 Chicken breasts

-1 tsp of salt

-1 tsp of pepper

-1 cup of artichokes (I used a jar of artichokes)

-1/2 cup of water (You could also use chicken broth)

-1 cup of coconut milk

-1 tbsp of garlic powder

-1 tbsp of mustard

-1 bay leaf

-1-2 cups of spinach


Directions

  1. Preheat the oven to 400F
  2. Slice your chicken breasts into 1-2 inch thick slices
  3. Add salt and pepper to the chicken, before sautéing.
  4. Using a cast iron skillet on medium heat, sauté each chicken side for 1 minute.
  5. Remove the chicken from the skillet and add in your artichokes, water, coconut milk, garlic and mustard.
  6. Cook the sauce on medium heat for 4 minutes.
  7. Add your chicken to your artichoke sauce, followed by adding in a bay leaf.
  8. Place your chicken in the oven to cook for 25 minutes.
  9. Remove from the oven and add in your spinach. Stir until combined.
  10. Serve and enjoy!
