Here is a good cozy, earthy soup that will brighten those grey days. This tomato dill soup is hearty and satisfying and full of flavour. You will not be disappointed. This soup is so easy to make, place all ingredients into a pot and let it cook. Easy!

Ingredients
- 2 fresh tomatoes, sliced
- 1 large yellow onion, sliced
- 2 cloves of garlic
- 1/2 butternut squash (peeled and diced)
- 1/2 celery root (peeled and diced)
- 1 can of diced tomatoes
- 1/3 cup of white wine vinegar
- 2 cups of chicken broth
- 4 cups of water
- 1 tbsp of nutritional yeast
- 1 tbsp of lemon pepper
- 2 tsp of salt
Directions
- Using a large pot on medium heat, saute your tomatoes, onion and garlic with some olive oil. Saute for 4 minutes.
- Add in all the remaining ingredients.
- Cook on low heat for 3 hours, this way the true flavour will come.
- Enjoy it with some crackers or garlic bread!
