
Ingredients
- 3 cups of oats
- 1 cup of oat milk
- 1 egg
- 1/3 cup shredded coconut
- 1/3 cup of apple sauce
- 1 tsp of salt
Cream Cheese Cranberry filling
- 1 1/2 cups of cream cheese
- 1 cup of cooked cranberries
Directions
- Preheat the oven to 350 degrees and line your muffin tray.
- In a large bowl, combine oats, milk, egg, coconut, apple sauce and salt. Once combined add one spoonful of the oat batter to each muffin cup. Create a slight cave in the middle of the cup for the filling.
- Bake the oatmeal cups for 20 minutes or until golden brown.
- Meanwhile, combine the cream cheese and cranberry sauce together.
- Once the oat muffins are cooked let them cool before adding in your cream cheese cranberry filling.
- Enjoy! Store them in your fridge, up to 4 days or freeze them.
