PUMPKIN GINGER LOAF

gluten free PUMPKIN GINGER LOAF

Ingredients

  • 1 1/2 cup of millet flour 
  • 1 tsp of cinnamon
  • 1 tbsp of ginger powder
  • 1 tsp of salt 
  • 1 tsp of baking powder 
  • 1/2 can of pumpkin puree
  • 1/4 cup of oat milk
  • 1 tsp of vanilla extract 
  • 1/4 cup of molasses 
  • 2 eggs 
  • 1/3 cup of honey 

Topping:

  • 1/3 cup of GF oats
  • Icing (I used a vanilla icing)

Directions

  1. Preheat the oven to 350°F and spray a 9 x 5 loaf pan. 
  2. In a large bowl add all the dry ingredients. Mix well. 
  3. In a separate bowl add all the wet ingredients. Mix well. 
  4. Place the wet ingredients into the dry ingredients bowl. Mixed until well combined. 
  5. Spoon the loaf batter into the greased loaf pan.
  6. Bake for 50-60 minutes, or until a toothpick comes out clean. 
  7. Let the loaf cool before adding sprinkling the oat and icing topping over the loaf.
