
Ingredients
- 1 1/2 cup of millet flour
- 1 tsp of cinnamon
- 1 tbsp of ginger powder
- 1 tsp of salt
- 1 tsp of baking powder
- 1/2 can of pumpkin puree
- 1/4 cup of oat milk
- 1 tsp of vanilla extract
- 1/4 cup of molasses
- 2 eggs
- 1/3 cup of honey
Topping:
- 1/3 cup of GF oats
- Icing (I used a vanilla icing)
Directions
- Preheat the oven to 350°F and spray a 9 x 5 loaf pan.
- In a large bowl add all the dry ingredients. Mix well.
- In a separate bowl add all the wet ingredients. Mix well.
- Place the wet ingredients into the dry ingredients bowl. Mixed until well combined.
- Spoon the loaf batter into the greased loaf pan.
- Bake for 50-60 minutes, or until a toothpick comes out clean.
- Let the loaf cool before adding sprinkling the oat and icing topping over the loaf.
