
Ingredients
- 2 cups of quinoa puffs
- 1 cup of peanut butter
- 1/4 cup of coconut oil
- 1 1/2 cup of milk chocolate wafers
- 1 1/2 tbsp of coconut oil
- 8-9 large marshmallows
- Optional: White chocolate for topping
Directions
- In a large bowl add your quinoa puffs and peanut butter. Mix until well combined. Add in 1/4 cup of coconut oil to the mixture. Stir again.
- Place one spoonful of the puff mixture into each muffin cup. Only fill the muffin cup half full. Leave enough room for the marshmallow and chocolate.
- Place your chocolate wafers and coconut oil in a medium size bowl. Microwave for 35 seconds and remove from microwave and stir. Place it back in the microwave for 35 seconds again. Remove from the microwave and stir until smooth.
- Add 1 tbsp of the melted chocolate on top of each puff mixture. Add one marshmallow to each muffin cup, on top of the melted chocolate.
- Over the marshmallow add 1-2 tbsp of the melted chocolate to cover the marshmallow.
- Place the marshmallow puffs in the freezer until the chocolate is solid.
- Add your melted white chocolate for decoration or whatever toppings you want. Remove the marshmallow puffs from the muffin cups.
- Enjoy!
Peanut Butter. Chocolate. Marshmallow. WHAT! oh ya, these NO BAKE marshmallow puffs are seriously soooo good. The combination reminds me of my childhood cookies, Whippet. I’m definitely adding these to my list of Christmas desserts to make this year and you should too. Just cause – they are easy, no-bake, gluten free and loaded with goodness.
This recipe will take you 15 minutes and make 12 marshmallow puffs.
