Dairy and Gluten Free Recipes




  • 1 lb. lean ground beef
  • 3 tbsp of olive oil
  • 1 tbsp of apple cider vinegar 
  • 1 cup of chopped yellow onion
  • 1/2 cup of chopped celery
  • 1/2 cup of chopped cabbage 
  • 1 cup of chopped carrots 
  • 3 cloves of garlic (minced)
  • 1 can of kidney beans (drained and rinsed)
  • 1 can of diced tomatoes 
  • 4 large sundried tomatoes (add some of the sun dried tomato oil if you want)
  • 6 cups of water


  • 3 bay leaves
  • 1 tsp of dried basil
  • 1 tsp of dried oregano
  • 1 tsp of thyme 
  • 1 1/2 tsp of salt and pepper 


  • 1 cup of chopped avocado 
  • 1/2 cup of parsley 
  • 1/3 cup of grated parmesan cheese 
  • A handful of tortilla chips 


  1. In a large soup pot on medium heat, saute the beef, onion and garlic for 7 minutes. Add olive oil, apple cider vinegar, celery, cabbage, carrots and saute for an additional 7 minutes. Before adding the other ingredients, make sure your beef is fully cooked. 
  2. Add all the remaining ingredients, including the seasoning. Keep the soup cooking at low heat for 3 hours. (This is the secret to getting all the flavour!) 
  3. Once done, enjoy adding your favourite toppings.

Having a bowl of cozy, comforting soup to warm me up from the inside is my perfect cold winter day meal.

Beef Tortilla Soup is one of my favorite meals. It is full of so much flavor and is so easy to make, it’s on constant rotation! The best part of this soup is the beef is cooked right in the pot, so it only requires one pot and is extra flavourful.
