CARROT CAKE BITES with white chocolate

No bake, gluten free CARROT CAKE BITES with white chocolate

Ingredients

  • 4 carrots, peeled and chopped
  • 1 cup of oats
  • 3/4 cup of pumpkin seeds
  • 1/2 cup of pitted dates
  • 2 tbsp of coconut oil
  • 1 tsp of cinnamon
  • 1/2 tsp of ginger powder

Topping:

  • 1 bar of white chocolate 
  • 1 tsp of coconut oil

Directions

  1. Using a food processor, place all the ingredients (not the chocolate) into the processor. Process until almost smooth. 
  2. Using a spoon, take one spoonful of the mixture and use your hands to create the ball. Keep your hands damp to stop the mix sticking to your fingers. 
  3. Place the balls into the freezer for an hour. 
  4. Place the white chocolate and the coconut oil in a bowl. Microwave for 30 seconds. Remove from the microwave and stir. Microwave for another  30 seconds and stir until smooth. 
  5. Dip your carrot cake bites into the white chocolate and cover the entire ball. Repeat for each ball. With any remaining white chocolate, drizzle over each ball. 
  6. Keep refrigerated and enjoy!
