TURKEY BURRITO SALAD

Ingredients

  • 1 pound of ground turkey
  • 1 can of black beans 
  • 1 chopped zucchini 
  • 2 chopped carrots 
  • 1 chopped shallot
  • 3 minced cloves of garlic 
  • 1 chopped orange bell pepper
  • 1 tbsp of olive oil
  • 1 tsp of salt 
  • 1 tsp of chilli powder
  • 1 tsp of dried oregano
  • 1 tbsp of apple cider vinegar
  • 1 tbsp of honey
  • 1/2 cup of tomato sauce
  • 1/2 head of romaine lettuce
  • A handful of parsley 

Cashew avocado sauce

  • 1 cup of cashews
  • 1 avocado
  • 2 tbsp of olive oil
  • 2 tbsp of lime juice 
  • 1 tsp of salt 
  • 2 cloves of garlic 
  • 1 cup of cilantro 

Directions

  1. In a large pot, on medium heat combine the turkey, beans, zucchini, carrots, shallots, garlic, pepper, olive oil and the spices. Cook for 20 minutes and stir occasionally. 
  2. Meanwhile, add all the cashew avocado sauce ingredients into a blender. Blend until smooth. (you can always add more olive oil if you require it to be more liquidy) 
  3. Once the meat is cooked, along with the vegetables, add in the apple cider vinegar, honey and tomato sauce. Stir for 3 minutes. 
  4. Once done, place the meat in a large serving bowl. Add the lettuce around the meat. 
  5. Using an ice cream scooper, scoop the cashew avocado sauce and add it to your dish. 
  6. You can either eat this meal with tortillas or have it as a salad. 

Get creative and see how simple this Turkey Burrito Bowl is to make. It’s filled with flavour, a whole lot of goodness and it’s healthy, yet not boring. You can eat this bowl or you can make those burritos with the wraps. Plus you can even switch out the protein to chicken or beef.
