SUMMER QUINOA SALAD with mango

Ingredients

  • 1 diced mango
  • 2 sliced kiwis
  • 1 diced apple
  • 1 cup of cooked quinoa 
  • 1 cup of chopped cherry tomatoes
  • 1 diced orange bell pepper
  • 1/2 diced avocado 

Vinaigrette: 

  • 1/3 cup of olive oil
  • 1/4 cup of apple cider vinegar
  • 1/2 tsp of salt 
  • 2 tbsp of lemon juice
  • 1 tsp of mustard

Directions

  1. In a medium size salad bowl, place all the ingredients inside. 
  2. Combine all the Vinaigrette ingredients together. Mix well. 
  3. Pour the vinaigrette onto the salad. Mix the salad and serve. 

It’s refreshing, bright and you’ll want second helping! Super easy to prepare and perfect for a summer side dish.
